Fresh cut produce experience increasing demand. Due to minimal alterations these products are at risk of microbial contamination. The survival and growth of strains of L. monocytogenes on a range of fresh-cut products will be determined during storage at 4 and 8oC, commercial modified atmospheres and at low dosage inoculation of various L. monocytogenes strains on growth potential and survival. 2 year stipend of 16,000 and up to 6,000 Euro in fees p.a. are available.
