The Master of Business and Science in Vineyard & Winery Management provides training in response to new market demands for wine industry professionals who have both technical (viticulture and oenology) and entrepreneurial (business management) skill sets. The program is designed to further student’s knowledge in business management, viticulture, and oenology. It seeks to complement the knowledge base through an individually structured and flexible curriculum. In an industry that is increasingly competitive, the integration of these skill sets within a company is essential for success.

Program structure

The study program focuses on three main thematic areas:

  • Business Management: Design and implement a business plan, i.e. operating statement, choice of actions, etc. Structure the legal and/or financial framework of the project. Strategically set priorities and monitor accomplishment of business objectives.
  • Vineyard Management and Wine Production: Analyze the interactions between soil/climate/plant. Manage the vineyard from plantation to harvest. Understand the science based fundamentals of terroir, choice of plant material, and canopy management through practical experience. Acquire and develop knowledge of oenology and winery technology. Conduct winery evaluations focused on aligning wine production with commercial objectives. Enhance tasting ability and sensory evaluation.
  • Commercialization: Establish a product price according to economical and technical criteria. Conduct commercial analyses. Hold a cost accounting. Calculate and analyze costs.

The Master in Viticulture and Enology aims at addressing how vineyard and winery innovation is quickly becoming part of the Italian viticulture tradition. Italy is now the largest wine producer in the world and boasts the greatest variety in terms of cultivars. The pecularities of Italian viticulture and chances to maintain a leading role are today bound to the ability to introduce sustainable innovation without losing its well-known appeal.

Learning objectives

The main goals of the program are:

● To acquire solid methodology and knowledge suitable to address innovation issues in vineyard and winery

● To achieve specific skills for new canopy management technique suitable to mitigate undesired climate-related effects, new sustain- able approaches for pest and disease control, precision viticulture and enology

● Develop the ability to diagnose limiting factors occurring in vine- yard and winery and to produce suitable solutions

Can I learn Italian while studying?

An intensive Italian course will be available to international students for the duration of the Master in Viticulture & Enology: innovation meets tradition.

Are there internships opportunities?

Students will need to carry out a mandatory internship for the duration of at least 450 hours (i.e. 18 ECTS) in a farm/wine estate/ institution.

A final exam is scheduled including a case study discussion and/or experimental activity carried out during the internship.

Can I work while studying?

Non-EU students entering Italy on a VISA are permitted to work part-time (20 hours per week).

Viticulture & Oenology: the science of grapegrowing and winemaking

This masters degree course consists of a curriculum specialising in cool-climate wine production, climate change effects on viticulture, terroir and sparkling wine. It also includes opportunities to visit other wine-producing areas in Europe. The Wine Department staff have considerable international expertise and research experience, and a brand new Wine Research Centre was completed in March 2014. This combination of experienced staff and modern research facilities will enable students to access an outstanding Masters-level education.

Course structure:

The programme aims to enable students to develop a deep and systematic understanding of wine science (oenology) and related disciplines, and then apply this knowledge to make viticultural and oenological decisions in complex circumstances.

Areas of study:

Students will be required to attend a two-week intensive course in vinegrowing and winemaking at the start of the programme.

The first semester comprises of three modules which enable students to gain and apply knowledge and understanding of current research in grapevine physiology, wine chemistry, biochemistry, and microbiology.

The second semester focuses on climate & terroir and sparkling wine. Students wishing to complete with the Post-Graduate Diploma in Viticulture & Oenology may elect to complete a dissertation and end their studies at this point. Students who intend to study for the full Masters degree will normally take an in-depth research methods module prior to commencing their Masters project.

The third semester is designed to allow students to complete their Masters project, which can be undertaken in the newly opened UK Wine Research Centre, or in another suitable location.

Career and progression opportunities:

This programme enables students to gain advanced skills and knowledge in vinegrowing and winemaking. It therefore prepares them for careers which require the application of a high level of technical knowledge and the exercise of a considerable degree of responsibility. These positions include Vineyard Manager, Viticultural

Consultant, Winemaker and Wine Quality Controller for the wine trade, and will also give the opportunity to continue post-graduate education. Students can also progress towards the achievement of a Doctor in Philosophy (PhD) qualification in related subjects. There is a high demand for these skills, not just in the UK, but also in emerging wine-producing countries who are seeking staff with a truly international approach to the subject and a strong understanding of the requirements of international markets like the UK.

OUTLINE OF THE PROGRAM

The proposed master program aims at training students in fundamental, both theoretical and experimental, physics with applications in photonics, nanotechnology, and quantum technologies. This combination, innovative at the level of a master program, is well aligned with priority investments in research at the European and international level, with thematic areas of growing demand for highly trained students, able to embark in a doctoral programme. This two-year master programme, fully taught in English for international students, is part of the Graduate School of Sciences of the University Bourgogne Franche-Comté (UBFC). It consists in both lessons and research project (3 month during the first year) / internship (5 months during the second year). This training program will be based on the internationally highly recognised research activities of the underlying laboratories ICB, Dijon and FEMTO-ST, Besançon.

OUR MASTER PROGRAM

This two-year master programme, fully taught in English for international students, combines macroscopic with nano- and quantum-scale topics. The programme aims at developing and improving students’ skills in fundamental optical physics, optical fibre communications, optoelectronics, laser technologies, ultrafast femtosecond optics, quantum information science, nanophotonics, nano-microscopy and nano-biosciences. This combination, innovative at the level of a master program, is well aligned with priority investments in research at the European and international level, and with thematic areas of growing demand for highly trained students.

The master programme is part of the Graduate School of Sciences of the University Bourgogne Franche-Comté (UBFC), Engineering and Innovation through Physical Sciences and High-technologies (EIPHI), which also includes a doctoral programme in the same topics.

Almost half of the programme is devoted to research project (3 month during the first year) & internship (5 months during the second year) in an international research team, leading to a master thesis aiming at the standards of a research article. This training program will be based on the internationally highly recognised research activities of the underlying laboratories ICB, Dijon and FEMTO-ST, Besançon, both having high international visibility in photonics, quantum technologies, nanotechnology and Engineering Sciences with researchers of high reputation.

TEACHING

Teaching consists of lectures, seminars by international researchers (both from the ICB & FEMTO-ST laboratories and from international partner universities), class tutorials, practical training & research work in laboratory, soft skills by professional coaches, technology and entrepreneurial courses by industrial partners, and French culture and language.

FUTURE CAREER PROSPECTS

Photonics is a very dynamic industrial sector in Europe and holds the potential for huge market growth. It has a substantial leverage effect on the European economy and workforce: 20-30% of the economy and 10% of the workforce depend on photonics, directly impacting around 30 million jobs. The master program offers intensive educational activities based on research activities of photonics, including nanophotonics and quantum technologies. It focuses on fundamental & applied research mainly targetting PhD programs, which will lead to recruitment in academia or in industry. A need of master degree students in the field of photonics & nanotechnologies, including specialties in quantum technologies boosted by the European flagship in Quantum Technologies (launched in 2018), able to embark on a PhD program both in academia & industry will strongly increase in a near future.

LIFE IN DIJON, CAPITAL CITY OF BURGUNDY (FRANCE)

The two-year master program takes place at the University of Burgundy-Franche Comté, located in the scenic cities of Dijon & Besançon. The former capital city of the Duchy of Burgundy, Dijon is a medium-size French city, where you can enjoy a vibrant and active cultural life, as well as quick getaways to the countryside and the world famous neighbouring vineyards of the so-called “Golden coast” (city center, climates of the Burgundy vineyard, and gastronomy listed as world heritage sites in Dijon by Unesco). Life in Dijon is very affordable and accommodation easily accessible. The city is well-equipped with modern tramway and bus lines, making commuting between any place in Dijon and the University easy and convenient. Dijon is also host of several top-level professional sports teams (football, basketball, handball, rugby…), while also offering a large diversity of sports facilities.

STUDENT PROFILE

Students eligible to the master program PPN must have obtained a degree equivalent to or higher than a Bachelor of Science. Background knowledge in general physics, optics, electromagnetism and quantum physics is mandatory. Candidates must have very good academic qualifications and a very good practice of English.

GRANTS

Many scholarships will be awarded each year to high quality foreign students.

APPLICATIONS

During the first year, students have to pass the examinations associated with the Master 1 (60 ECTS credits) in order to proceed to the second year, Master 2 (60 ECTS), including research project and master thesis (33 ECTS).
