The MSc programme Food Safety focuses on the technical aspects, as well as on the legal aspects of food safety and integrates these in Food Safety Management. The Food Safety programme of Wageningen University was the first MSc in Food Safety worldwide. The programme is unique, with a highly integrated approach to the field of food safety.

Programme summary

Wageningen University is one of the few universities in Europe able to offer education and research in all fields of food safety. This does not only include technical disciplines such as microbiology and toxicology, but also the legal, economic and communication aspects. The Food Safety programme at Wageningen University is one of the most modern and innovative in the world. Started in 2000 as the first of its kind, it is still the only two-year, full-time Master Food Safety programme offered in Europe and the only programme offering Food Safety Law. The programme prepares graduates for careers in the food industry, government or consumer organisations; the three key players in international food safety management.

The food industry is increasingly confronted with farm-to-table food safety measures, regulations, legislation and guidelines aimed at controlling food hazards. As a result, there is an increasing demand for managers with expertise in food safety evaluation who are able to survey and monitor the chemical, microbiological and physical parameters of product composition and product safety. Food safety experts are able to understand and analyse the variation in quality and safety of products. They are also able to assess the potential risks involved in the adoption of new production methods and processing techniques. Food safety evaluation concerns food constituents, agro-chemicals, environmental contaminants and natural toxins.

Food regulations are getting more and more complex, creating the need for regulatory affairs specialists in industry or in lobbying organisations. The programme is the only programme offering Food Safety Law for students with either a technical or a legal degree, thereby, fulfilling the need in society for such positions.

Specialisations

The programme offers three specialisations. All three specialisations have the courses on Food Safety Management and Food Law in common.

Applied Food Safety
This specialisation deals with the more technical (microbiology, toxicology, risk assessment) part of food safety. Food Safety Economics is also part of the programme. Thesis topics are also in these fields and graduates generally work in industry, universities and research institutes.

Food Safety Law
This specialisation is open for students with a technical or legal background. Courses focus on (international) food law, intellectual property rights and management. Theses are on food law. Graduates generally work as regulatory affairs specialists in industry.

Supply Chain Safety
This specialisation deals with safe food and ingredient supply. Globalisation leads to serious risks of contamination. In tropical countries, companies also face wars and political problems. Courses thus focus on Food Security, Risk Management in Food Chains and logistics, in addition to Microbiology and Food Law.

Your future career

The employment market is promising and all recent graduates found jobs with relative ease. The demand for university-trained professionals in this field is currently higher than the number of graduates available. Most recent graduates found jobs in the private sector, at universities or at food safety research institutes. Many graduates enter careers in government and go on to managerial positions. Six modules will be delivered by blended methodology to achieve award with two optional modules in both safety-related and security-related elements. FURTHER INFORMATION

The course will be taught at the UCLan Preston City Campus. It may incorporate visits to nuclear installations with simulation time to demonstrate the key nuclear safety characteristics of a nuclear facility; this will be subject to satisfactory security clearance from the nuclear industry.

During the one year multi-disciplinary master program students will become familiar with the political and social dimensions of the governance of (in)security and crises. By analyzing security discourses, security actors, security practices and security outcomes students will become acquainted with the ‘wicked problem’ of security and crises topics in a complex and globalizing world.
As security is no longer a public good solely provided by state actors or public actors but the combined outcome of public actors, private security actors, civil society and citizens as well, the master program will focus on the multiplicity of actors engaged in defining and practicing security.

Further, as a result of the globalized and interwoven world of today in which incidents, images and messages travel within seconds from one part of the world to another part of the world, students will study current security and crisis challenges from a ‘glocal’ perspective: both global and local levels and especially the nexus of those levels.

Format

In the master’s program students will be confronted with the insights of various academic disciplines and a combination of theory and practice and skills relevant for a professional career in public or private security and crisis organizations. Students will become familiar with the causes of different forms of crises and threats to security, with patterns of responses and governance of these phenomena, and policies and strategies to prevent threats, incidents or crises. Introduction

Food security is a complex issue of global significance and understanding the role and contribution of seafood within food security is an emerging research area. Seafood products are provided by both aquaculture and capture fisheries and are one of the most highly traded food products globally. Including seafood in our daily diet provides an affordable source of macro and micronutrients required for optimal human health and development.
This course is designed to introduce the global issues affecting seafood production and trading, and will promote an understanding of the key factors affecting aquatic food production, post-harvest protocols, post-mortem metabolic events and microbial/chemical processes key for food safety and quality. Sensory assessment and shelf-life extension technologies will also be covered. The course will also examine other key issues in seafood trading such as traceability systems, certifications as well as the impact of governance and legislation on the global seafood sector.
This is the only aquatic food security MSc currently available in the UK. It will comprehensively follow the food chain from production through to consumer health and welfare.

Structure and content

This course shares some modules with the MSc in Sustainable Aquaculture and there is flexibility within the system to change the degree title depending on what advanced modules are taken. The course is divided into four taught modules, containing 18 subject areas or topics, and a single Research Project module.

Delivery and assessment

In addition to lectures, tutorials and seminars, a number of assignments must be completed. Laboratory-based practical sessions are also important elements of the course. Taught module assessment is continuous, involving short tests, seminars, essays, practical reports, critical and computational analysis, field assignments and set project reports. The Research Project module is examined through written dissertation and seminar presentations by both supervisors and an external examiner.

Modes of study

The course is available on a block-release basis (by selecting individual or a series of modules) over a period not exceeding five academic years.

Academic strengths

The Institute of Aquaculture has been closely associated with the global expansion of aquaculture initially through developing and improving the existing production systems and the development of new farmed species. In recent years our research has focused on increasing the sustainability and reducing the environmental impact of these activities. In addition, we have recently invested in new posts in Aquatic Food Security whose activities also include research into food safety and quality post harvest, aquatic animal nutrition, as well as developing mathematical models of production systems. We therefore have expertise that covers the whole production cycle from farm to fork.
The Institute of Aquaculture is internationally recognised for both research and teaching and is one of only a handful of institutions devoted to aquatic food security. The goal is to develop and promote aquatic food security building on the Institute staff expertise in sustainable aquatic animal production.

UCLan has developed strong relationships with nuclear employers which include Sellafield Ltd, National Nuclear Laboratory, BAE Systems at Barrow and Westinghouse Ltd. As a result, the course is uniquely designed and is delivered from a UCLan campus, offering employees already working within the sector and assisting employer led provisions, a flexible programme to fit in around their work patterns. Access to those people from the general engineering sector is also being encouraged.

A variety of assessments including laboratory and field visit reports, project reports and presentations to test the ability and knowledge in specific nuclear safety and security projects. The programme offers modular delivery and will include lectures, seminars and visits to nuclear sites. Six modules will be delivered by blended methodology to achieve award with two optional modules in both safety-related and security-related elements. Upon completion the student will receive 120 credits.

The course will be taught at the UCLan Preston City Campus. It may incorporate visits to nuclear installations with simulation time to demonstrate the key nuclear safety characteristics of a nuclear facility; this will be subject to satisfactory security clearance from the nuclear industry.

Students entering this course are primarily from nuclear-related industries, in which case the programme offers a professional career development route and provides opportunities for professionals with experience of the nuclear safety and security industry to place this expertise in an academic context. The degree course aims at training a professional engineer with a thorough knowledge and understanding of the principles of systems engineering of transportation, logistics and production, in which to realize the acquired ability to conceive, plan, design and manage complex, innovative systems and processes, with particular attention to the related safety aspects.
The degree in Safety Engineering for Transport, Logistics, and Production will support the state exam for a license to practice in all the three areas of Engineering: Civil and Environmental, Industrial, and Information.

What Will You Study and Future Prospects:

The main goal is to enable M.Sc. graduates to operate in the various activities related to safety in transport systems, logistics, and production, but also of the territory where they are located.

The course provides notions about:

• the risk assessment of local systems, and in particular the planning, design and management of both safety (protection against accidental events) and security (protection than intentional events);
• the evaluation in terms of cost/benefits of different design alternatives for risk mitigation in transport, logistics, and production systems;
• the planning and management of the mobility of people and goods, through the knowledge of the fundamental elements of transport and logistic systems, as well as the criteria to define the physical characteristics of isolated infrastructures a network of infrastructures, with particular reference to the relevant functions and interdependencies;
• the design and safe management of transport, logistic, and production systems, with reference to either the systems as a whole, and to the relevant single components, such as infrastructures, facilities, vehicles, equipment;
• the development and use of advanced methods to manage and optimize the performance and safety of road, rail, air and sea infrastructure and transport services, as well as their interactions in an intermodal framework, by means of the design and implementation of monitoring, regulation, and control systems via the most advanced technologies related to their specific disciplines;
• the analysis and evaluation of the externalities of transport and logistic systems, with explicit reference to the particular safety aspect and issues characterizing each phase of the mobility of people and goods, even within the production plants connected, and their interaction with surrounding environment.

The course is articulated into two alternative curricula:

1. TRANSPORT AND LOGISTICS: This curriculum concentrates on the problems related to design and manage the complex systems that realize a safe and effective mobility of passengers and freights.

2. INDUSTRIAL LOGISTICS AND PRODUCTION: This curriculum concentrates on the problems related to design and manage the complex systems that realize a safe and effective production plant internal logistics and management.

Entry Requirements:

Admission to the Master of Science in Safety Engineering for Transport, Logistics and Production is subject to the possession of specific curricular requirements and adequacy of personal preparation.

The access requirements are equivalent to those provided by the general educational objectives of all three-year university degree in classes of Civil and Environmental Engineering, Information Engineering, and Industrial Engineering. In fact, one of the following curricular requirements must be fulfilled:

• possession of a Bachelor, or a Master degree, or a five-year degree in classes of Civil and Environmental Engineering, Information Engineering, and Industrial Engineering, awarded by an Italian University, or equivalent qualifications;
• possession of a Bachelor, or a Master degree, or a five-year degree with at least 36 ECTS (“Base Courses”, e.g. Mathematics, Physics, Chemistry, Informatics) and at least 45 ECTS that pertain to the Engineering classes, awarded by an Italian University, or equivalent qualifications;

To access, a knowledge of English is required, at least equivalent at B1 European Level.

It will offer the opportunity to obtain a unique qualification in the field of food safety delivered by research-active scientists within the Institute for Global Food Security.

The subject of security has considerable contemporary relevance, both nationally and internationally. A long and diverse list of issues have been characterised as security threats from warfare to global warming.

On this Masters you will consider events such as these across a range of different perspectives discussing their implications for security at the international, national and local levels as well as their relevance to different actors such as the state and the individual.

For example, the ongoing Syrian civil war and the breakdown of the Syrian state may represent a security risk for the UK by giving groups likes ISIS the space to operate and potentially attack the West. However, if we alter our focus we quickly become aware of a range of different insecurities felt by civilians displaced from their homes and struggling to survive as a result of the conflict.

Course Structure

Each module has four hours of teaching and learning attributed to it per week.
