The Master of Food Science (MFS) program was launched in 2007 as complementary to the existing and highly respected M.Sc. and Ph.D food science programs. While the M.Sc. program has a research focus and is well suited for those who are interested in a career in research, the Master of Food Science meets the worldwide demand for graduates of advanced degrees for government and private industry involved in the large-scale manufacturing and/or distribution of food products.

The program will develop competencies in a variety of areas, including:

In the course of our day-to-day life, we come into contact with a vast number of chemical, biological, and physical agents that could do us harm. These agents are present in the air we breathe, the water we drink, and even the food we eat. We encounter them when we travel and when we work or when we use consumer goods such as cosmetics or electrical equipment.

Determining the source of these risks, and quantifying their effects, requires cooperation by experts across a host of different disciplines. Our Master’s programme in Toxicology and Environmental Health has been designed with this in mind, training you in the fundamentals of toxicology, environmental epidemiology, emerging toxicological agents such as nanoparticles and zoonotic components, and exposure assessment. This programme will enable you to assess the risks present in the workplace or the food chain.

The multidisciplinary nature of this programme means that you will have the flexibility to specialise in a particular field or undertake more generalist training in risk assessment. You may also take part in experimental research in the fields of neurotoxicology, immunotoxicology, allergies, in vitro toxicology, endocrine toxicology, environmental toxicology, and chemistry. Toxicology is the study of adverse effects of chemicals and other substances on humans, other animals, plants and the environment, and how they can be avoided or minimised. These courses provide an introduction to the principles of modern toxicology in relation to environmental, occupational, and public health in the context of the chemical, food and pharmaceutical industries. These courses are aimed at individuals with a scientific qualification who wish to develop their skills and knowledge of toxicology and gain a recognised third-level qualification in the area. Current practising toxicologists will also benefit from undertaking individual modules for continuing professional development (CPD), as all of the modules will contribute towards maintenance of professional toxicological accreditation. The course content has been approved by the Irish Register of Toxicologists (IRT) and is recognised as accreditation for CPD in this area.

These courses have been developed in close collaboration with the Irish Register of Toxicologists (IRT) and are also approved for accreditation towards becoming a registered toxicologist and for CPD credits towards maintaining IRT/ERT accreditation. Biotechnologies for Food Science

In the 2016-2017 academic year, the University of Padova inaugurated a new curriculum of the Master Degree “Biotechnology applied to Food Security and Nutrition” (Second Cycle Degree) entitled “Biotechnologies for Food Science " to be entirely taught in English.

The “Biotechnologies for Food Science " Master degree (MSc) is an interdisciplinary and research-oriented Master of Science Programme and explores how to produce healthier and safer food following a cross-cutting, farm/field-to-fork approach. It is focused on the application of advanced biotechnologies in food production and safety and it is the ideal trait-d’union between the requests of consumers, of producers in the agro-food sector and research applied to production and food-safety.

The course has a strong component on cutting-edge methods, such as genomics, bioinformatics, proteomics, metabolomics, nanotechnologies, all in the context of animal and crop production as well as food quality and safety. Theoretical lessons are mixed with practical training, offering hands-on experience in advanced DNA, RNA, and protein analysis together with substantial lab sessions in bioinformatics. Lectures will deal with food production, hygiene and quality, molecular methods of agro-food analyses, effects of agro-biotech products on human beings and environments. Moreover environmental stresses, disease mechanisms, pathogens and pests will be treated as essential to understand how to protect crop and farm animals and how food might impact on human health: the lectures move across animal infectious disease, immunology, microbiology, plant pests and pathogens as well as abiotic stresses to show how biotechnology might help preventing disease and improve food production. As consumers are increasingly worried about the presence of contaminants in food and on the real origin of what they eat; the Programme includes a course in food toxicology and regulation, and one on traceability for food authentication.

Our Programme is based at the Agripolis campus, where are located four departments of the School of Agriculture and Veterinary Medicine of the University of Padova, all of which contribute to the MSc course, offering the best opportunities for a rich, cross-disciplinary experience in a highly qualified scientific environment.

Who is the MSc candidate?

This programme is open to Italian and foreign students from the EU and abroad, interested in learning and implementing effective value-added practices for the production of high-quality food products both in the EU and in international markets. English knowledge must be minimum at B2 level (CEFR). Applying students might possibly have a three-year Bachelor’s degree in a field connected with the Master’s curriculum. Good background in molecular biology, biochemistry, and microbiology is requested.

How is the programme organised?

Biotechnologies for Food Science is a 2-year Master programme (120 ECTS, equivalent to a Master of Science). Requirements for graduation include courses and preparation and defense of the Master thesis. Students will be encouraged to spend a period of their studies abroad, through Erasmus+ or other local programmes and agreements. Financial support to meet part of the cost for thesis work is granted to best students.

Teaching methods

Teaching takes place in an international environment and includes lectures and laboratory activities, practical exercises and seminars by experts; opportunities for intensive tutoring and for master thesis-related stages of at least six months duration will be available with outstanding companies in the sector of the food industry or with other relevant organisations in the private or public sphere. The Programme assists students to find suitable internship opportunities with qualified laboratories in Italy and abroad.

Examinations are written or oral and assess students’ participation also through reports, presentations, and group work.

Course structure

First year

During the first year of the programme the student will acquire knowledge on animal and crop genomics, focusing on the most advanced methods for high throughput genomic analysis (transcriptomics, genome-wide SNP analysis, epigenomics) and on the most recent approaches for selective breeding (genomic selection, genomic prediction). In parallel, the student will learn how bioinformatics tools might be applied to manage large sets of data, how biological data bases are organized and how to link different types of data. Extensive practical training in bioinformatics will be offered with various sessions in a dedicated lab. Food-borne pathogens and the positive role of microorganisms in food processes will be examined in an integrated microbiology course, while the molecular basis of pathology, host-response to infection, epidemiology, and diagnostics of transmissible diseases will form the basis of two courses. A course on biotechnology for crop production will introduce the molecular and physiological basis of crop production. Biotechnological approaches to improve crop yield, with particular attention to fruit production, and to reduce impact of abiotic stresses will examined. Molecular tools for food traceability and an intensive practical lab in DNA/RNA/protein analysis applied to food control will conclude the first year.

Second year

In the second year, the first semester have three courses. One will focus on novel technologies (proteomics, metabolomics, nanotechnology) and their application to food production. A second one will extend knowledge on plant biotechnology exploring advanced technologies for crop disease and pest management. A third one will deal with contaminants in food and food legislation. The second semester is completely dedicated to lab internship. It is possible to join a research lab in the campus or to have a working stage in the private sector.

You will spend over 200 hours of our course making good use of our biomedical science laboratories, working on specific research projects that are of interest to you and that align with our expertise. You study the causes and pathophysiology of diseases and intervention with drugs. The programme is interdisciplinary covering the whole range of drug development disciplines. From basic drug target discovery to molecular modeling of targets. And from synthesis andanalysis, pharmacology, toxicology and biopharmacy to clinical pharmacoepidemiology and post marketing surveillance.

The main feature of the programme are research projects in which you will learn about conducting research by actually doing it. You will independently perform experiments and go through the whole process of conducting science developing skills such as studying scientific literature, formulating hypotheses, designing and performing experiments, and interpreting and presenting your results. The programme therefore is a good preparation for a PhD programme or for independent practice of science in a future job.

You can either choose to design your programme tailored to your individual research interest or choose a specialisation. Available specialisations:Toxicology and Drug Disposition, with focus on adverse drug reactions and toxicokinetics of drugs, or Pharmacoepidemiology which studies intended and unintended effects of drugs in daily life.

The University of Aberdeen is highly regarded for Clinical Pharmacology as the discipline has been taught and delivered for 30 years and research spans 50 years. The programme draws on strengths within the university and medical area within disease discovery and treatment. The major innovation of Insulin was first developed at University of Aberdeen in the 1920s, winning the inventors a Nobel Prize and giving the world a major step forward in the management and regulation of insulin. Since this time the discovery of drug process, treatment and design has been developed and researched at Aberdeen. The University is also known for its research in food and nutrition, bacteria, gut issues researched at the world famous Rowett Institute and growing knowledge of disease process and latest innovative treatments.

Clinical pharmacology forms a critical part of the drug development process and our graduates are employed in the pharmaceutical and biotechnology industries. These industries are now in rapid growth due to a combination of innovations and strength within customised and other types of medicine and treatment industry areas. The industry is also a major contributor of GDP in the UK. Further innovations which link into this industry come from easier upscaling processes, customisation and the Internet of Things and more ability to treat and diagnose at source.

There is always a strong need for the discipline to provide a foundation to any new innovations which often come from multidisciplinary teams. Our aim is to train students in the major areas of clinical pharmacology including molecular pharmacology, drug metabolism and toxicology, therapeutics, pharmacokinetics, pharmcovigilance, regulatory affairs and experimental medicine. The programme aims to achieve this by a multi-disciplinary approach.

If you are interested in how drugs metabolise, small molecule discovery and biologics this programme will provide an advanced level of study and challenge to ensure you have sound skills to innovate within the drug development industry. This industry area is rapidly expanding due to new discoveries across biotechnology, biologics, Internet of Things, customised drug treatments and diagnostics at source. This has lead to many new companies being formed, customised and small batch medicines apart from large batch pharmaceutical research and production.

University of Aberdeen is world renowned in this area with the invention of Insulin to treat diabetes which won a Nobel Prize and strengths in medical research areas which also include food and nutrition and disease treatment. You learn about bio-business, how drugs are developed and managed. The university has strong links with GSK, Pfizer, and AstraZeneca plus Novabiotics and others.

In our MSc in Drug Discovery and Development we train students in major areas of biochemical and molecular pharmacology and therapeutics relevant to the drug discovery and development business. The need to develop new strategies to combat diseases remains a major global challenge. This degree aims to enhance your employability and prepare you to tackle this challenge.

We’ll give you advanced training in the mechanisms underpinning a spectrum of infectious and non-infectious diseases, including viral, bacterial and parasitic infections, cancer, neurodegeneration, cardiovascular disease and chromosomal abnormalities. You’ll also explore current and emerging diagnostic and treatment strategies.

You’ll learn about the latest molecular, genetic and cellular approaches being used to understand, diagnose and treat human disease, including traditional methods such as polymerase chain reaction (PCR) and enzyme-linked immunosorbent assay (ELISA), and novel methods involving genome and proteome analysis.

You’ll also have the opportunity to investigate the role of the immune system in the response to infection and disease, covering topics such as innate and adaptive immunity, allergy and immune evasion.

If you choose to study at Leeds, you’ll join a faculty ranked 6th in the UK for its research impact in the recent Research Excellence Framework (REF 2014), and you’ll graduate with the solid base of scientific knowledge and specialist skills highly valued by employers.

Course content

On this course you’ll gain an overview of a range of modern techniques and methodologies that underpin contemporary biomolecular sciences. You’ll investigate five topic areas: molecular biology, structural biology, cell imaging and flow cytometry, high throughput techniques and transgenic organisms.

You’ll also apply your knowledge to an extended practical investigation in the form of a laboratory-based project, involving practical training in a range of modern molecular biology and protein engineering techniques such as gene cloning, PCR, mutagenesis, protein expression, protein purification and analysis.

To help you to develop and specialise, you’ll get substantial subject-specific training through an independent research project in an area of infection, immunity or human disease.

You’ll also take specialist taught modules covering topics such as infectious and non-infectious disease, advanced immunology, medical diagnostics and treatment of infectious diseases and cancer.

If you have previous experience of immunology, you could opt to investigate the structure, regulation and development of the pharmaceutical manufacturing sector, or explore aspects of human toxicology. These could include the actions of toxicants on the cardiovascular, immune and nervous systems, kidneys, liver and lungs, genetic toxicology and chemical carcinogenesis, and the effects of chemicals on fetal development.

In the final part of the course you'll work on an independent laboratory-based research project related to your course options. You’ll receive extensive training in experimental design, the practical use of advanced techniques and technologies, data analysis and interpretation, and will be assigned a research project supervisor who will support and guide you through your project.

About the Program

An increasing number of chemicals is used by society today, which are also released into the environment. Ecotoxicology is concerned with their potential impacts on the ecosystem. It aims to investigate and discover effects of chemicals on biological systems in order to develop methods for risk management, as well as to predict ecological consequences.

The international "Master of Science program in Ecotoxicology" integrates concepts of Environmental Chemistry, Toxicology and Ecology and includes Social Sciences and Economics as well. Due to its interdisciplinary and applied approach, the Program enables its graduates to analyze complex problems and to develop practical solutions.

As environmental problems reach far beyond national borders, an international approach is necessary and the situation in developing countries needs special solutions.

The Master in Ecotoxicology is carried out under the Institute for Environmental Sciences.

Program Structure

All students take the 9 required modules, as well as a 10-week Research Project Course and an Applied Module at External Organisations of 8 weeks to obtain a deep knowledge in the field of Ecotoxicology. Afterwards, studentes personalize the Program by choosing 2 Modules of the 5 Specialty Areas. The Master Thesis with colloquium round out the 4-semester Program.

Applied Module at External Organizations (AMEO)

The module AMEO is an 8-week internship, which can be performed at an external university or a governmental or industrial research institute in Germany or abroad. Students become familiar with working practice, requirements of the job market and career opportunities and can establish business contacts. They apply, confirm and expand knowledge and competences achieved during their study.

Following an introductory discussion with the supervisors, the students perform the (research) work on their own and discuss the obtained results regularly with their supervisors. The content depends on the actual research questions in the selected research organizations. Topics or possible positions will be suggested by the staff of the Institute for Environmental Sciences or maybe suggested by the students. The topics should be directly related to applied problems relevant in these external organisations and should ideally offer the students opportunities to apply their knowledge and skills in areas, which are not the particular research areas at the Institute for Environmental Sciences in Landau. They include, but are not restricted to the following areas:

Engineering aspects (e.g. hydrology, mitigation techniques)
Multimedia modelling
Food web modelling
Fish, bird or mammal ecotoxicology and risk assessment
Agricultural sciences
Socioeconomics
Specific aspects in regulatory ecotoxicology
Risk communication, economic or societal aspects

Research Project Course (RPC)

The students work independently on a research topic of the university for a total time of about 10 weeks. The topics depend on the actual research conducted in the various research groups. However, all topics do have an interdisciplinary character covering at least two different disciplines (e.g. chemistry and ecology, or physics and risk assessment). The students submit proposals for topics selected from a list provided by the teaching staff including a time and resource planning as well as an independently conducted literature search. Following an introductory discussion with the supervisor, the students perform the research work on their own and discuss the obtained results regularly with their supervisor. Following the practical work, the students write a report including the theoretical background, the methods used, the results obtained and a discussion of the results based on the relevant scientific literature. The students present and defend the outcome of their work at an oral presentation. Following successful completion the students are able to plan a scientific work package, conduct the work, evaluate the results based on the relevant literature and present the outcomes.

The content depends on the actual research questions in the research groups associated with the Institute for Environmental Sciences. They include, but are not restricted to the following areas:

Chemical experiments in the lab
Environmental colloid chemistry
Environmental organic chemistry
Physical transport or transfer processes of environmental chemicals
Ecotoxicological lab tests
Ecotoxicological field studies
In situ or monitoring work in the field

The Program enables the graduates to conduct independent scientific work and prepares in particular for independent and leading positions in the numerous emerging fields of Ecotoxicology. The graduates are able to take responsibility in a professional manner in: Scientific facilities and research institutes, Authorities, public offices and ministries with a regulatory role, Non-governmental organizations, Industry and consulting enterprises. The international orientation of the program qualifies graduates for a global job market. In addition, the Master program prepares for a PhD study.
