The Food Design Master’s degree program enables students to become design professionals in the food industry, exploring all related sectord. Combining marketing management and communication skills with design innovation, the program’s education model engages with design ssensitivity and methodology for food packaging, tourism, nutrition, agriculture, retail, restaurants, science, objects and experiences.

The program combines a focus on food-related markets with design approach and methodologies. This creates a food designer who is able to:
• Manage the design of processes, methods and spaces where products are processed, distributed and consumed.
• Manage food in terms of its aesthetics, communication and representation.
• Manage the equipment and tools used to prepare and consume food.
• Coordinate the communication activities implemented for the promotion of food products.

The Master’s in Food Design and Innovation program is comprised of lessons, design workshops, and seminars with the leaders of the food and agriculture industry and of the design field: entrepreneurs, managers, journalists, food critics, designers, architects, publishers and chefs.

In addition, students will visit food companies, concept stores, and restaurants, as well as important gastronomic fairs and events. At the end of the course, students will have an internship experience in a company, agency or firm working in the field. This masters is held in collaboration with important companies and firms of the food industry.

The course lasts one year (from February/March) and is entirely taught in English language.

QUALIFICATION

After passing the final exam, students will obtain a taught Master’s Degree from IULM and SPD. The Master corresponds to 60 ECTS credits. The Master is managed and organized by: Libera Università di Lingue e Comunicazione IULM and Scuola Politecnica di Design SPD jointly.

ABOUT THE SCHOOL

Founded in Milan in 1954, SPD Scuola Politecnica di Design is the first postgraduate school for design disciplines in Italy. Situated in Milan, the capital of design, Scuola Politecnica di Design pioneered design education thanks to its solid grounding and to its peculiar approach integrating different domains: ergonomics, art, perception studies, semiotics.

Today, SPD is an international laboratory for the exchange of ideas, experience and creativity in order to develop projects. Since its foundation the school has welcomed an extraordinary community of students from various countries and backgrounds.

All courses are taught in a personalized and small learning environment promoting easy contact with the faculty and the staff. Indeed, at SPD every student is followed individually by a faculty formed by designers, professionals from different fields and visiting tutors.

The masters programs offered by SPD are organized in collaboration with IULM University, and award academic degrees recognized by the Italian Ministry of Education, The University and Research MIUR, corresponding to 60 credits under the ECTS system.

The teaching method at Scuola Politecnica di Design is arranged into intensive workshops, studio classes, theoretical lectures, seminars and visits. The programme comprises compulsory modules of theoretical and analytical topics in areas such as innovation, creativity, team-working and leadership. Special features include analytical design exercises, multimedia educational material, research methods, case studies, design audits and international placements.

The aim of the course is to create closer links between design and industry and to widen the horizons of design management students, enabling you to make informed reference to the world beyond design – to users, the market, new technology, economics, politics, law and the global environment.

All organisations use design, but few master its use strategically. This course provides the skills and knowledge to students wishing to enter this exciting and rewarding field of endeavour.

This innovative course was one of the first Master’s programmes - globally - that sought to explain the relationship between innovation and design and the importance of applying a strategic approach using design thinking, design methods and process.

CONTENT

The course is structured to develop strategic and creative expertise within the design and delivery of innovative service experiences. Students are encouraged to undertake projects that will tackle many of the social, corporate and environmental challenges facing the 21st century. Projects may be as diverse as conceiving services to mitigate the digital divide of the senior citizens of London borough, to designing a virtual reality in-store experience for a global insurance company, through to realizing an innovative business proposition for a personal start-up.

It is aimed primarily at students who have a graduate design discipline and wish to broaden their understanding of innovation and design as a collaborative interdisciplinary process. However, the course would also be of interest to students from social science backgrounds and related fields.

STRUCTURE

On the course you will have the opportunity to take part in design projects, workshops and study tours. These will be embedded in a sound theoretical framework of lectures, case studies, seminars and tutorials.

Terms 1 and 2 of the course will provide you with a detailed knowledge of core theory and skills in innovation and creativity. The skills and knowledge obtained will enable you to articulate design ideas, observations and solutions creatively as designers, as well as demonstrating rigour and critical evaluation in your work. You will be able to apply your design thinking strategically and add value to new and challenging contexts.

Term 3 builds on the knowledge and skills you have acquired and applies these to the creation of original design research projects. This involves the development of a major project on the basis of extensive research, investigation and a firm methodological approach.

In term 4 students will continue with the development and production of a final major project that will need to demonstrate the testing of ideas, exploring the context of the project as well as identifying key issues such as appropriate discourses, research methodologies, materials and media through which you can effectively communicate your ideas. The course will challenge existing orthodoxies and encourage design related communication, service and product innovation problems to form the focus of the final major project.

Specialist facilities

We have plenty of facilities to help you make the most of your time at Leeds. We have an impressive range of resources that you can use to develop your projects.

At the top of our research facilities we have the world’s most sophisticated mobile eye-tracking glasses, which are used to understand how users interact with design (see more information at http://www.tobiipro.com). Other excellent research facilities are our EEG equipment (electroencephalography) to understand how users interact with the world, and our colour analysis/prediction lab.

We also house the M&S Company Archive including documents, advertising, photos, films, clothing and merchandise from throughout Marks & Spencer’s history. ULITA, an archive of international textiles, is also housed on campus and collects, preserves and documents textiles and related areas from around the world. You can make appointments to view items, but it also has an online catalogue where you can explore the major collections.

You’ll also be able to develop your practice in well-equipped studios and purpose-built computer clusters so that you can build your skills on both PC and Mac. There is also a computer-aided design (CAD) suite with access to the latest design software, and some of the latest design technology, such as digital printing, screen printing, 3D printing, and laser cutting.

Course content

In Semester 1 you’ll study a set of compulsory modules that will allow you to develop a range of research, conceptual and practical design skills and tools to lay the foundations for the rest of the programme. You’ll have the chance to learn through case studies, practical exercises and work on briefs encompassing all specialisms offered.

In Semester 2 you’ll have a choice of optional modules that focus on current trends in design practice and research. These optional modules will give you the opportunity to work on live projects from industry and/or live research projects being conducted in the School of Design. You’ll work on group and/or individual projects to explore more specific and advanced skills and tools in your areas of interest.

In Semester 2 you’ll also choose and develop a specialist project in which the tools and skills learnt in Semester 1 are applied. Projects can be developed in a wide range of topics that suit your interests and career ambitions. These include: Branding Design, Digital and Interactive Design, Information Design, Instructional Design, Graphic and Visual Communication Design, Service Design, and Typographic Design.

In Semester 3 you can choose one of two pathways: 1) Continue with your specialist design project, develop it at a professional level and apply it in a real-life context (with suitable users) for evaluation; 2) Produce an independent research dissertation based around a relevant field or topic within the specialisms offered.

Learning and teaching

You’ll be taught and guided by a diverse team of staff who are leaders in their fields, with a wide variety of research interests and years of experience as design practitioners.

We use a range of teaching and learning methods so you can benefit from their expertise. These may include lectures, seminars, tutorials, workshops, group learning and meetings with your tutor or supervisor. However, independent study is crucial to this degree, as it allows you to develop your skills and explore your own ideas.

Assessment

Depending on the modules you choose you’ll be assessed by different methods. They’ll include individual and group projects, project proposals and reports, presentations and reflective reports.

Career opportunities

This programme will equip you with a range of design skills using different media, as well as allowing you to hone your specialist skills in an area of your choice. It will also equip you with advanced skills in research, analysis, teamwork, presentation and communication that will be valuable in a range of careers.

You’ll be well prepared for a career in design practice. You can set up your own freelance business or take up a key position in a design studio, agency or organisation.

Get the specialist skills and knowledge you need to be a successful professional in the design industry. In this three-trimester programme, you'll learn the art of bringing ideas to life—from conception to design to construction.

Choose one of three majors—Industrial Design, Media Design, and Culture+Context Design—in this industry-focused, professional qualification with the School of Design. Assess new technologies and investigate the social, cultural, environmental and economic implications of design on our world.

Through a combination of coursework and supervised research you'll gain a greater understanding of the process of creating value through design.

Design Research Innovation Labs (DRIL)

You'll do much of your work in the Design Research Innovation Laboratory (DRIL), giving you a stimulating and supportive environment for inspiration and discovery. Choose a research group with DRIL that fits with your current knowledge and career goals, and your intended thesis or research portfolio topic.

Work with commercial and cultural organisations on applied research projects, build your communication and collaboration skills and get ready for an exciting career in design.

What you'll study

In the first trimester you'll study the 30-point Research Methods course. Examine a variety of design research techniques to help inform and guide your thesis project. Gain the skills you need to identify a design research topic, frame a research question, define the scope and develop your proposal.

You'll further develop your knowledge and expertise in design research in the second trimester. You'll join a Design Research Innovation Laboratory (DRIL) and nominate a supervisor so you can begin your 90-point thesis. You'll also complete one 400-level, 30-point course in your major subject area while continuing to work on your thesis project within your DRIL.

In the third trimester you'll focus on completing your design research thesis project with the guidance and support of your DRIL stream coordinators and supervisor.

Design Research Innovation Laboratory (DRIL)

DRIL research groups receive support from government, industry and external grants. They produce a range of commercially viable solutions that contribute to the advancement of design research.

You'll choose from one of five research groups within DRIL:

Through DRIL you'll work closely with staff, students and industry collaborators on research projects that address a wide range of contemporary design challenges.

Duration and workload

The MDI can be completed in three trimesters of full-time study or in six trimesters if you are studying part time. It usually takes full-time students between 13 and 18 months to complete.

If you are studying full time, you can expect a workload of 40–45 hours a week for much of the year. Part-time students will need to do around 20–23 hours of work a week. Make sure you take this into account if you are working.

Community

We educate designers who can articulate and develop cutting-edge practices in key areas of interaction design: tangible and sensor-based interaction, wearable and embodied interaction, game design, participatory design practices, critical design, social innovation and collaborative media development. Practical Design Skills and Academic Research

Interaction design is a rapidly changing discipline, and we maintain the relevance of our education by working with real-world design cases and outside clients that include local industry partners, as well as cultural and civic organisations. Navigating a shifting design landscape also requires the critical mindset of a scholar, and we foster reflective design by teaching research skills and involving students in active research projects.

Internationally Recognised

Our programme was founded in 1998, making it one of the more established programmes of its kind. We focus on areas where our design and research excellence is internationally recognised: tangible and sensor-based interaction, wearable and embodied interaction, game design, participatory design practices, critical design, social innovation and collaborative media development.

Who are you?

Interaction design requires the fusion of multiple skill sets. We recruit students with different backgrounds – design, media, engineering, the arts, and social sciences – and focus our teaching on creating disciplinary synergy in the concrete design work.

Content

The programme comprises full-time study for one academic year, divided into four courses starting with a studio-based introduction to multidisciplinary collaboration and mainstream interaction design. The next two courses address embodied interaction and collaborative media, two of our signature topics. The final course is a Master’s level graduation project.

Teaching Methods

The programme is based on a learning-by-doing pedagogy. This means that we encourage an iterative practice of experimentation and reflection. As teachers, we view ourselves as coaches guiding you in this process.

Studio-based

The programme is studio-based. You will also have access to computer labs, a materials workshop and a prototyping lab for electronics, sensor and microprocessor programming.

Group work in multidisciplinary teams

The primary method of learning is through group work in multidisciplinary teams with classmates and other stakeholders. Abilities to work in teams and with others – including user communities – are important parts of our curriculum, and several projects are organised to practice doing this.

Humanistic approach

With our humanistic approach, you will be practicing qualitative research approaches to support your design of tangible artefacts as well as digital and interactive services, systems and artefacts. We emphasize an understanding of people in their use situations.

Reflective and experimental design thinking and practical doing

Prototyping in the studio and real-world contexts is an integral part of becoming an interaction designer.

To practice reflective and experimental design activity, projects and courses integrate seminars and hands-on workshops introducing students to, among other things, ethnographic fieldwork, visualisation, low- and high-fidelity prototyping, microprocessor programming and video sketching, as well as evaluation of use qualities. All these practices are backed up by literature references and examples.

The thesis project

Your thesis project will be a combination of a design project and reflective writing that will involve communicating and discussing your design work. This is one result of a student's work in Thesis Project I.

Working environments

Students have access to studio space, and we encourage a healthy studio culture. This is where we conduct group-work, seminars, workshops, presentations and discussions. Close by there is a well-equipped materials workshop and a physical prototyping lab for electronics and sensor work. Additionally, we often use the facilities at the MEDEA research centre for final presentations, exhibitions, seminars and programme-meetings.

Career opportunities

Students enter the programme with different kinds of expertise, from art and design to engineering and social sciences. Upon graduation, you will have built a strong understanding of how your particular skills play a role in interaction design and how they combine with other specialities of fellow designers.

Potential positions

Most alumni move on to positions as interaction designers, user experience specialists or usability architects in the ICT, telecom and media industries. For some, this involves fine-tuning the interfaces and interactions of current products to users' needs; other interaction designers work on concept development for future products and services. Yet other alumni find their calling in strategic positions where the role of interaction design is considered in relation to market and business development.

This taught research course gives you the opportunity to carry out in-depth original research into design practice while developing the skills to become an independent, critical thinker and effective design researcher.

The taught modules provide a framework of transferable skills that apply to all researchers as well as those relevant to your chosen pathway subject of Arts, Design, English Literature, History, Social Science, or Media.

You will gain an understanding of research methods while developing expert professional skills in communication, self-management, and project planning. You will devise and deliver a significant research-based project in the form of a dissertation or practical arts based project, to demonstrate your interests and ability to think independently.

Whether you go on to further PhD study, or work as a researcher for a range of public services and professions, this course gives you the research and professional skills for a successful career.

Mark Bailey is Director of Innovation Design and leads the University’s partnership with Unilever. He spent 10 years in the Aerospace industry working on advanced passenger and business jet concepts.

After graduating from Northumbria’s School of Design, Bruce Montgomery became a designer for fashion brands including Katherine Hamnett, Moschino and Jeff Banks.

Matthew Lievesley has helped develop improved care-pathways for people with Type II Diabetes in collaboration with Newcastle University Medical School.

Dr Irini Pitsaki specialises in Design Management and Strategic Brand Management with more than 15 years of experience as a researcher and lecturer in higher education.

Dr Mersha Aftab’s current work looks at Role of Design at strategic level in multinational industries. Her passion for teaching led to a full time lectureship teaching Innovation.

Dr Stuart English is a specialist in design led innovation, and the creator of Ideas-lab. He leads a portfolio of postgraduate programmes.

Elizabeth MacLarty has a degree in Fine Art from Leeds University and her research interests include the relationship of theory to practice, particularly in Design Education teaching practice.

Teaching And Assessment

You’ll learn through a combination of discipline-specific and core framework modules that develop your research skills.

You’ll undertake a dissertation or project of 20,000 words (or 10,000 word dissertation in support of a practical project for Arts practice researchers). This can be either a specialist, in-depth study based upon a substantial body of subject-relevant sources or a you can take a broader ranging approach crossing over a number of disciplines.

You will also take two discipline-specific modules that examine the key themes, traditions, and debates in your chosen discipline.

You’ll be assessed by a mixture of traditional and innovative practices, including dissertation (or equivalent project), oral and written presentations, critical reviews, and portfolios of work.

The academic team will help you develop the skills required to plan, manage and review your learning.

Research-Rich Learning

Northumbria is in the UK top 10 for research power in Arts and Design. The School of Design hosts three research groups:

Design Issues
This research group addresses complex social and cultural issues from a design perspective. They work on themes such as social care issues with the Carers Centre Newcastle and Alzheimer’s Scotland and socio-economic challenges with Newcastle YMCA and Traidcraft.

Design Innovation and Research Methods
This group focuses on innovating and creating value across society by applying design-led innovation and better research methods to support the work of designers in context. Work involves the industrial and commercial sector, such as design's role in corporate innovation and creativity in product manufacturing and service organisations.

Design Making
This research group focuses on materials and the cultural and technology benefits of making in society. Researchers work in product, industrial, interaction, service, textile, craft, fashion and interior design disciplines.

The School of Design offers a practice-based MRes pathway built on the wide range of our design research exploring the space between society and technology supported by expertise spanning Innovation Design Engineering, Global Innovation Design, Design Products, Healthcare Design, Service Design, Vehicle Design and Intelligent Mobility.

The pathway welcomes a broad approach to design research and encourages experimentation in practice-based methods supported by experienced researchers. Approaches can range from User Centred Design, Ethnographic, Anthropological, Action Research, Participatory Design Research, Cybernetics, Grounded Theory, to Transformation Design, Speculative, and Critical Design. We encourage diverse candidates who want to focus on commercial research, to prepare for doctoral studies and a future career in academic research or use the programme for career change to develop new skills and identify new research interests. Students will be introduced to relevant design research tools, methods, methodologies, theories and epistemologies aimed at supporting the development of a personal research approach. Applicants to the MRes Design pathway will benefit from an advanced practice-based design research culture and enjoy the freedom and autonomy that a self-directed research journey allows.

The School of Design has a long history of design research that can be traced back to Bruce Archer and the NHS hospital bed design in the 1960s through to today’s researchers who are internationally engaged in a broad range of areas from intelligent mobility through to citizen science, the future of making, socio-cultural design, experimental design, design for safety, design policy, service design and artificial intelligence and robotics as well as providing strategic advice to government and agencies. Recent commercial research funding partners have included Huawei, Tata, Airbus, Microsoft, and Intel amongst others with grant-maintained funding from the AHRC, EPSRC and the Lloyds Register Foundation.

We also have an excellent set of visiting experts and a global network of research collaborators that we draw on in our integrated School-wide research culture. These also bring strong synergies with the other RCA Schools and expertise areas including the Helen Hamlyn Centre for Design combined with a strong local set of collaborations with the Science Museum, the Victoria and Albert Museum, the Design Museum and Imperial College London with whom we share three of our master’s programmes.The pathway encourages experimentation in practice-based research, supported by experienced researchers working on both commercial and grant maintained projects across the School’s major research themes, in areas including mobility, healthcare and the future of making. The training we provide through designing research and researching through design will be suitable for both commercial and academic careers as a stand-alone qualification and act as an accelerator to prepare for doctoral studies.
