Applicants will be BSc graduates with a food science, nutritional sciences or biological/life sciences background, ideally who are currently working in the dairy industry, or dairy industry personnel with UCC’s Level 7 Diploma in Food Science and Technology.

All students must have access to a high-speed broadband internet connection and basic computing skills, including access to and some proficiency in Microsoft Excel. This is an intensive Level 9 programme and considerable commitment from students is expected.

Format

The Postgraduate Certificate in Dairy Technology and Innovation is a blended-learning part-time programme running for one academic year.

The Dairy Business Management programme will provide a complete pathway from PgC to MSc for dairy industry employees who wish to increase their competence and capability with respect to dairy business management theory and practice. The programme will also provide dairy business employers with the opportunity to select appropriate staff for management development through a course of study at postgraduate level which has been designed specifically to meet the needs of the dairy sector.

How will it benefit me?

On completion of the course at MSc level, students will be able to identify and understand the operational management requirements of dairy businesses, as well as define and establish management practises for the identification and control of factors affecting animal welfare, product quality and food safety. Students will become competent in identifying the threats to the development and success of dairy businesses and establish strategies and plans to deal with them.

Students will be able to identify and understand requirements for the management of the supplier and customer interfaces existing within and in relation to dairy businesses, as well as establish and implement strategies and practises that enable effective and efficient supply chain management.

In addition, students will be able to comprehend and interpret the financial management requirements of dairy businesses, as well as define, rationalise and apply the leadership and management requirements and styles needed to successfully lead and manage individuals and teams.

Indeed, a Food Scientist acquires knowledge of microbiology, sensory analysis, biochemistry, chemistry, physics and engineering. The essential role of a Food Scientist is focused on how to enhance the quality, safety, functionality and nutrition of foods.

This is reflective in the research performed within the Department of Food Science at Guelph. For example, food safety research is directed towards studying approaches to prevent, detect or decontaminate foods. Food preservation methods are researched that encompass processing technologies and packaging innovations. The application of science to improve the quality of dairy products, chocolate, ice cream, cereals and meat are also studied. Research into methods of food analysis and sensory science as well as studies around nutraceuticals and functional foods are high profile research areas. Food Innovation and Management
This specialisation combines courses in Food Technology with courses in Management Studies. You will do a thesis in Management Studies and an internship in one of the Food Technology groups.

Food Biotechnology and Biorefining
This specialisation focuses on using micro-organisms or enzymes in food production. During this specialisation, you will learn about processes that can be used for biorefinery or agricultural raw materials. The focus is on biotechnological food production. You major in Food Microbiology, Food Chemistry, Food Process Engineering.

Dairy Science and Technology
This specialisation focuses on the dairy production chain. Sustainable Food Process Engineering
This specialisation focuses on the development of processes that are more efficient in their use of resources. European Masters Degree in Food Studies

Overview

This is an advanced course for students who want to develop an in-depth knowledge and understanding of the biology, welfare and conservation of domesticated and wild animals managed for production or leisure.

Course Modules

The MSc programme is delivered over 1 year on a full-time basis during two teaching blocks (semesters one and two) and a period of supervised and independent study (summer). It may also be completed over a two-year period on a part-time basis. The first two semesters (15 weeks each) include 4 taught modules. The dissertation is studied during the subsequent 20 week period in the summer. Each taught module is worth 15 credits whilst the dissertation is 60 credits.

The full MSc degree course consists of 120 compulsory taught credits plus 60 core credits from the dissertation. The Postgraduate Diploma (PG Dip) can be awarded with 120 taught credits. Whilst a Postgraduate Certificate (PG Cert) can be awarded on the successful completion of any 60 taught credits. Credits obtained from the dissertation can also be used when considering whether a postgraduate diploma can be awarded. Before progressing onto the Masters dissertation from the Diploma, students would need to complete the Research Methods module or its equivalent as a prerequisite.

Entry Requirements

Applicants will normally hold a good BSc Honours degree (2.2 or above) from a recognised university in a related science subject such as animal science, agriculture, biological sciences, zoology, veterinary or bioveterinary science or other appropriate life-science degree. Applicants with a BSc (Hons) 3rd class pass, with extensive industrial experience may also be considered for the Masters programme. Applications from non-UK students are particularly welcome. All applications received will be reviewed and decisions for admission to the programme will be made on individual merit. Applicants may be interviewed if there is some doubt over the extent of academic qualification or linguistic skills.

Applicants for whom English is a second language are required to demonstrate a level of competence that enables them to study at a postgraduate level. A test score of 6.5 is required in the IELTS (International English Language Testing System) tests.

Learning & Teaching Methods

The teaching methods are a mixture of lectures, seminars, tutorials, visits and student managed learning. The self-guided study takes place under the supervision of experienced staff from the Centre of Equine and Animal Science at Writtle University College. Students are assessed using a number of methods, for example written examination, reports, essays, seminars, debates, oral presentations, case studies and project dissertation.

The research project is an essential part of the MSc programme and provides the opportunity to carry out an independent piece research, critically analyse data and write a dissertation. The project will normally include hands-on practical experimentation to teach students how to gather and process data and problem solve. The project is supervised by an academic member of staff and takes place over an extended period during the spring and summer. The project can be based either at Writtle University College or other suitable external institution.

Careers

Graduates are likely to use their award to secure management-level jobs and/or to improve their promotion prospects if they are already employed both in international and national organisations. Many opportunities exist in either government services or related agencies services: for example senior positions in DEFRA as quarantine officers or animal health inspectors. There are also numerous career opportunities in companies specialising in farm animal nutrition and pet food manufacturing, breeding and reproduction, veterinary medicines and pharmaceuticals. There also opportunities in charities engaged in animal welfare such as the RSPCA, zoos, animal rescue centres and safari parks. Also, independent wildlife agencies such as the RSPB, Scottish Natural Heritage, Natural England, and the Countryside Council for Wales would be interested in Animal Welfare and Conservation graduates. Some graduates may take up lecturing positions in universities and colleges or proceed to do further postgraduate study e.g. PhD.

This two year part-time master's level programme is known as the Diploma in Bovine Reproduction continuing the tradition started when the programme commenced in the 1980’s and reflects the academic comparability to Royal College of Veterinary Surgeons (RCVS) Diploma qualifications. The qualification is recognised by both the RCVS and European College of Animal Reproduction (ECAR). It provides postgraduate education in an important aspect of the bovine health. The overall aims of the programme are to enable veterinary surgeons in regular contact with cattle to:

achieve a widely-based and deep understanding of bovine reproduction, which will enable them to provide sound scientific advice to the cattle industry;
develop appropriate skills; and
maintain a critical approach to their own work.

The programme is modular in structure, with eight residential weeks spaced over two years. Learning methods include lectures, demonstrations, videos, practical work, discussions, field visits and directed reading. Participants will be expected to satisfy essay and work based continual assessments for each module during the course; to pass written, practical and oral examinations of the final module at the end of the programme; and to present a dissertation, not exceeding 10,000 words, before the award of the Diploma.

Guidance is given by staff of the University of Liverpool and by invited contributors, each a recognised authority in a specialised field. Teaching takes place mainly at Leahurst, the University of Liverpool’s rural campus.

Although mainly restricted to the study of reproduction in cattle, the programme includes reference to other species to establish biological principles or to illustrate concepts for which information is not available in cattle and also covers key areas impinging on fertility such as nutrition and infectious disease.

Facilities
The School has two bases: the University’s main campus in Liverpool and the Leahurst campus in Wirral. Leahurst has highly equipped research laboratories, which are shared with the research institutes of the Faculty of Health and Life Sciences, as well as being home to the Philip Leverhulme Equine Hospital, the Farm Animal Practice and the Small Animal Teaching Hospital.

Our clinics provide numerous cases for clinical investigation, as do our co-operating veterinary surgeons in private practice. The School also has excellent relationships with farming enterprises and Chester Zoo.

Individual topics within the DBR are also offered as CPD for those who do not wish to attend the whole programme.

Our staff work closely with colleagues from medicine, life sciences, and the Liverpool School of Tropical Medicine, not only on animal disease and welfare, but on human health too – taking a ‘one health’ approach from long before the phrase was invented. We also collaborate with colleagues from social sciences to exploit fully the comparative nature of veterinary science. This greatly extends the postgraduate study and research opportunities at Liverpool.

Wide coverage across the postgraduate programmes

The School of Veterinary Science at the University of Liverpool provides excellent postgraduate scientific and clinical training, from population to whole animal studies to the molecular level.

Recognised by the European College of Animal Reproduction

Successful reproduction is the cornerstone of the dairy industry. The DBR has been rin for nearly 30 years and has been completed by some of the leading farm animal vets practicing in the U.K. They have also contributed back into the course to maintain its relevance to modern Cattle Practice.

The DBR is recognised as a Diploma level qualification by RCVS and a recognised training course by the European College of Animal Reproduction.

Career prospects

Course participants are in employment as veterinary surgeons and most become employed in specialist private practice. Some have moved to academia internationally.

Many practices are using the fact they have DBR holders and support such study when advertising for new staff and to gain farmer clients. Candidates use the qualification as a springboard to specialisation.

The course has close links with industrial partners, with guest lectures, site-visits and an annual on-campus Nottingham Feed Conference, providing access to the latest developments in the animal feed industry.
The programme is managed by the school’s Division of Animal Sciences, which has an international reputation for research in animal nutrition, development, reproduction and biotechnology. The division also manages a successful undergraduate degree in Animal Sciences.

Course Description

This course, offered by a leading research institute in grass-microbe-animal interactions in relation to sustainable efficient farming, is aimed at professionals working within the agri-food sector. It provides students with an in-depth understanding of the components of ruminant production and mixed farming systems, focussing on the latest research into how these systems can be made more sustainable and efficient.

The aim of this Professional Doctorate programme is to produce a qualification which, whilst being equivalent in status and challenge to a PhD, is more appropriate for those pursuing professional rather than academic careers. Our DAg programme comprises taught modules and two work-based research projects, carried out through two-day workshops, distance learning and a mixture of live and virtual supervisory meetings. While the primary academic focus is on the completion of an advanced piece of research, the collaborative route provided by a work-based research project provides an ideal opportunity to embed new knowledge in the work place and ensure that research is relevant to industry. As such, it is crucial that a student’s employer is supportive of both their research aims and the time commitment that the proposed research will involve. Self-employed students should aim to undertake research which will be closely aligned to their business.

Modules

The ATP DAg is delivered in two parts:

Part I is undertaken for a minimum of two years and comprises two taught modules from the ATP menu*, a taught ‘Research Methodologies’ module; and a portfolio of work or a research thesis (approximately 20,000 words in length). Each taught module is worth 20 credits and takes 12-14 weeks to complete. The short Part 1 thesis should involve analysing existing data from the candidate’s workplace. For example: Reviewing historical mineral deficiency data by species and region; analysing and interpreting the findings. Students may exit here with an MRes.

Part II is undertaken for a minimum of three years and comprises a longer portfolio of work or a research thesis (up to 60,000 words). It will involve experimentation and must embody the methodology and results of original research. It should, ideally, be built upon the Part 1 thesis. Thus, from the example above, could be something like: Changing practices and introducing innovation to combat mineral deficiencies.

Applied Animal Biology offers opportunities for advanced study and research leading to M.Sc. and Ph.D. degrees in animal physiology, behaviour, welfare, and management of livestock, aquaculture, and wildlife species. Graduate training in applied animal biology normally involves a combination of courses in both basic and applied sciences, with research leading to a thesis or dissertation. Students are expected to publish their research results in relevant leading international refereed journals. Coursework selected in consultation with the student's supervisory committee includes graduate courses in areas relevant to each student's research.

The program is enriched through collaboration with colleagues in other UBC graduate programs such as Zoology, and with agencies such as Agriculture and Agri-Food Canada, Fisheries and Oceans Canada, Canadian Wildlife Service, and the Society for the Prevention of Cruelty to Animals.

Applied Animal Biology is intended for students who want to study and/or work with animals. It provides students with fundamentals of animal behaviour, animal physiology and related fields as applied to farm, companion and other animals. It also exposes students to the role of animals in human society and the ethical, environmental and other issues that arise. It offers training in research skills needed for graduate work, and (with appropriate selection of courses) prepares students for admission to veterinary and human medicine. Students have various options to gain practical experience on farms and in laboratories, animal shelters and wildlife rehabilitation centres.

Potential career paths include veterinary medicine, human medicine, biomedical research, animal ecology, sustainable aquaculture, animal training, animal nutrition, wildlife rehabilitation, wildlife conservation, agricultural extension and animal welfare.

Food is necessary for human survival, is an important source of pleasure, and plays an enormous role in the global economy. Microbes play an essential role in food preservation and safety, food for health and food biotechnology. These are growing areas in all global economies. UCC Microbiology has established a global reputation in food microbiology, based on its research profile and the impact of its graduates in the food industry.

This course covers the breadth of classical and modern food microbiology, including food safety and spoilage; food fermentation; food biotechnology; hygienic production of food; the impact of diet on health; the molecular mechanisms of infectious microbes and the role of the gut microbiota in human health. Students may also wish to take advantage of the limited number of optional industry placements which are available on this course for the research dissertation.

Course Details

The MSc in Food Microbiology is a structured one-year full-time course which includes a six-month lab-based research dissertation. The aim of this course is to educate you to an MSc level in food microbiology, emphasising areas in which UCC engages actively in research, e.g. food biotechnology, food fermentations, food safety, food for health.

The course will give you the knowledge and skills to contribute to Irish and international food industries. Modules will be chosen with the approval of the Programme Board depending on your background.

After completing this course you will have:

- advanced theoretical education and practical training in the area of food microbiology
- greater knowledge and understanding of current issues in food microbiology
- laboratory research practice in food microbiology
- knowledge from different aspects of food microbiology and formulation of appropriate judgements on scientific research
- ability to survey scientific literature at a professional level
- knowledge, understanding and problem-solving skills to address practical issues in the food industry and work there at management level.

Format

Lectures and workshops are conducted between 9am and 6pm (Monday to Friday). Up to 138 lecture hours with approximately 70 additional directed study/reading hours can be expected. There are 38 hours of laboratory practicals/workshops, which may be carried out as half-day or full-day workshops. Students also complete a six-month lab-based research dissertation on a topic in the area of food microbiology, performed under the supervision of a member of staff and in some cases co-supervised by collaborating research centres. The project aims to enhance your laboratory skills and critical abilities in identifying, analysing and solving problems in scientific research and to develop your skills in communicating your results.

Placement and Study Abroad

Some placement opportunities exist for research projects to be carried out in collaboration with industry partners or at the Teagasc Food Research Centre, Moorepark in Fermoy.

Assessment

The course uses a variety of assessment methods. Most modules are assessed by in-term continuous assessment and/or end-of-year examinations. In-term exams can be either multiple choice type questions (MCQs) or written papers (normally 1.5h duration). Most modules include assignments, dissertation and reports as part of the assessment methodology. Modules that contain workshop/practical components are also assessed using written reports/assignments. The laboratory research project is assessed by a combination of laboratory performance, written report and oral presentation. The research project (MB6007) is written up in the form of a dissertation and approved by an external examiner.

Careers

The MSc in Food Microbiology is designed to equip graduates to work in a range of management, research and innovation roles within the Irish and international food, beverage and associated industries. Graduates will be in a position to support new product development, innovation and quality assurance functions in the dairy, meat, consumer foods, soft and alcoholic beverages and food ingredients sectors. Graduates will also be equipped to work in a range of other areas such as contract food-testing laboratories, the regulatory and consumer protection sectors. Graduates also have the option of proceeding to further studies at PhD level.
