Applied Human Nutrition is a practical, research driven masters course detailing the science behind the nutritional requirements of humans from pre-conception to old age.

Recently there has been a significant rise in diet-related illnesses around the globe, such as obesity, type 2 diabetes, certain cancers and cardiovascular disease. Poor nutrition is causing increasing public health problems in all sectors and ages, especially among the young and the elderly. On the other hand, in some areas of the world deficiency diseases and malnutrition are common.

A key focus of this course is examining the provision of food and nutrients to the body to facilitate optimum physical and mental development and maintenance of health throughout a lifetime. It also emphasises the specific problems of global nutrition and the public health implications.

The course is suited to graduates with a background in the biological sciences. Applications are encouraged from UK, EU and international students with an interest in acquiring expertise in nutrition, and from graduates who wish to pursue careers as nutritionists.

Teaching and learning

Teaching is organised on a module-credit basis, with each module involving approximately 200 hours of student input and approximately 36 hours of staff contact, normally delivered through three hours' teaching each week for 12 weeks. Learning methods include lectures, directed reading, workshops, seminars, practical and project work. The research project will be supervised on a one-to-one basis.

Each module is assessed individually, generally on the quality of written or design work, and to some extent on verbal presentations. Assessment methods may include essays, seminar papers, formal written examinations, in-class tests, project work, design and verbal presentations, workshops, simulations, and practical exercises.

Teaching staff are drawn primarily from the Department of Sport and Health Sciences, but will include visiting speakers from business and industry, local government, consultancies, research bodies and other universities.

The Functional Food Centre is an internationally-renowned research group consisting of visiting professors, fellows, research assistants and PhD students, who are all researching nutrition and food topics.

What will I learn?

Modules consider obesity and weight management from a variety of perspectives. The course begins with a focus on the obesity epidemic and moves on to cover key areas such as childhood obesity, behaviour change, exercise, dietary approaches, causes of obesity and assessment in obesity.

The MSc is then completed with a research methods module followed by a research project.

How will I be taught?

Our course runs on a modular basis and is delivered at Parkgate Road Campus. Sessions will involve a mixture of practical and theoretical work, relevant to the module being studied. This includes body composition assessment workshops and practical exercise capacity testing.

Each module is delivered in intensive learning blocks of typically three days (25 hours), which are followed by self-directed learning supported by experienced tutors.

How will I be assessed?

Assessment is by a 4,000-word written assignment or its equivalent – e.g. poster presentation. Research projects may be laboratory or work based under the direction of an individually allocated supervisor.

Research

Sport and exercise science research occurs within the world-leading Applied Sports Technology Exercise Medicine (A-STEM) Research Centre.

Significant research in diabetes and health as well as sedentary behaviour, physical activity, fitness, fundamental movement skills in childhood obesity is undertaken by a number of clinical exercise science staff.

Our elite sport performance group is leading a project supported by the European Regional Development Fund through the Welsh Government to position Wales at the forefront of Science, Technology and Medicine in elite sport and to promote its wider application in health and education. This project represents a unique collaboration of leading Welsh academics, businesses and sport, with the overall objective of enhancing their respective performances.

Fundamental links integrating engineering and sport and exercise science research are being developed by the Sports Visualisation Group who analyse video material to rapidly produce data for immediate analysis of sports performance. Recently the Engineering Behaviour Analytics in Sport and Exercise (E-BASE) research group was set up to investigate the use of advanced sensor and processing technology to quantify training and activity in sport and clinical populations respectively.

We have international research links and projects with universities in Southern and Eastern Europe, Scandinavia, Australia, New Zealand, Canada, USE, Italy and Austria.

Dr Rutherford is a Principle Lecturer in Physical Activity & Health. She joined Leeds Beckett in 2013, and completed her PhD, 'School day opportunities for promoting Moderate-to-Vigorous physical activity in primary children', at Liverpool John Moores University in 2011. A consultant and researcher in the measurement and promotion of health and physical activity, Dr Rutherford is currently working with colleagues on the impact of sedentary time on health and interventions to reduce it.

The Department of Health Science offers a Master of Arts in Health Studies. This program is tailored to train Health Promotion professionals to design, implement and evaluate interventions to foster behaviors conducive to health. All of our graduate programs are theory-driven and based on related research findings. Completion of the Master of Arts Program qualifies students to sit for the Certified Health Education Specialist (CHES) exam. The CHES certification, offered by NCHEC, is the only mechanism for demonstrating competence in Health Education in the US.

Program Guidelines: This 30 semester hours program has a core of 18 credit hours of required coursework and requires an additional 12 credit hours of electives. COMPREHENSIVE EXAMINATIONS

All students are required to pass a six hour written comprehensive examination that addresses the content of the six core courses in order to obtain their Master of Arts degree. This exam is proctored and students may not use any outside resources. Each one of the two parts of the exam is graded as “passed”, “passed with contingency”, or “failed”. Sections “passed with contingency” require additional work before the contingency can be lifted. Failed sections must be retaken. Failed sections can only be retaken once.

Description

The MSc Women and Children's Health comprises three core taught modules, including ‘Fundamentals of Womens and Children’s Health’ which covers health and disease from the periconception period to birth and early childhood. Research led lectures will cover topics such as infertility, pre-pregnancy health, placentation, preeclampsia; immunology of pregnancy and autoimmune disease, metabolic disease in pregnancy, parturition and dysfunctional labour, miscarriage and preterm birth, lactation and infant nutrition, the developing brain and prematurity, childhood diet and dental health, premature infant and the neonatal lung, gut microbiome, obesity, childhood allergy, epigenetics and lifelong health, nutrition and global health and perinatal mental health.

The other required taught modules are Statistics and Research Governance, and Scientific and Clinical Research skills followed by an intensive six month core research projectwithin a lab or clinical research group.

Students can also select 1-2 optional taught module(s) to tailor the course to their developing interests, examples include Perinatal Mental Health, Ethics in Child Health, Regenerative Medicine, Principles of Implementation and Improvement, Science, Leadership and Management, Birth Defects, Assisted Conception, Regenerative Medicine and Global Women's Health.

The programme fosters intellectual skills of students through:

  • Critical assimilation and appraisal of the research literature pertaining to Womens and Children's Health.
  • Production of original pieces of written work that explain, review and evaluate primary research literature and using this evaluation to develop ideas and hypothesises.

Course format and assessment

Teaching

A typical week would be have approximately 10-15 hours teaching with the remaining hours dedicated to self-guided learning. In the final semester, research projects are full time with hours dedicated to practical and data collection, data analysis and writing.

You will study via a combination of lectures, journal clubs, group discussions, practicals, workshops and independent study.

Peer feedback, in course assignments such as data handling, research project and project report write-up, journal club, presentations and essays. All will be actively encouraged throughout the research project.

Typically, one credit equates to 10 hours of work.

Assessment

We will assess you through a combination of coursework, seen/unseen written exams, essays, problem directed learning exercises, case studies, ethical problem debate, data-handling, creation of clinical study materials such as patient information sheets and consent forms, research proposal, oral presentations, and a final research project report.

The study time and assessment methods detailed above are typical and give you a good indication of what to expect. However, they may change if the course modules change.

Nutritional medicine concerns itself with the part that nutrition plays in health, disease, lifecycle and ageing.

The aim of the programme is to inform and educate those to whom the public turns for advice on nutritionally-related aspects of health and disease and those involved in the manufacture of foods and food supplements.

It is appropriate for the in-service training of doctors, dietitians, pharmacists and healthcare workers.

The programme consists of three-day taught periods at the University, preceded by preparatory study, and followed by consolidation and assessment. It will teach you to take a critical and scholarly approach to the theory, practice, literature and research findings within the subject.

Programme structure

This programme is studied part-time. On successful completion of the programme the exit awards are as follows

  • Post Graduate Certificate: 4 modules (60 credits)
  • Post Graduate Diploma: 8 taught modules (120 credits)
  • MSc: 9 taught modules plus a research project (180 credits)

On successful completion of the MSc programme, students are eligible for direct entry on to the UK Voluntary Register of Nutritionists as an Associate Nutritionist via the Association for Nutrition. Students who exit with a Diploma or Certificate would still be eligible to apply for Associate Nutritionist Membership, via the Portfolio- based application pathway.

Distance learning prior to attendance at the module

You will receive some preliminary material (that will require approximately 40 hours of study) around four weeks before you attend each module.

This will generally be background material (for example, a core text and/or specially written material/journal article/s) aimed at ensuring that all students, whatever their previous learning experience, will have attained a certain basic knowledge of the subject and its terminology.

Teaching at the University

The three-day periods spent at the University consist mainly of formal lectures, but will also include interactive or participative sessions incorporating some of the following learning strategies: workshops, syndicated work, demonstrations, case studies, debates, and journal clubs.

You will generally be given additional papers, reviews, notes or reading lists relating to the module lectures.

Distance learning following attendance at the module
