Prepare for a career in the brewing industry

This new one year full-time masters course prepares graduate level scientists for a career in brewing, or its allied industries. The programme facilitates the development of technically competent and creative brewers by providing substantial hands-on experience of practical brewing, using our state-of-the-art pilot facilities.

Practical brewing skills are supported with technical knowledge to ensure that graduates understand the scientific principles which underpin the brewing process and are able to innovate, problem solve, and conduct scientifically robust experiments. The programme ends with an innovative brewing research project, specifically designed for you to practise your acquired skills.
This course is taught by staff from the School of Biosciences with expertise in brewing and related sciences, together with invited contributions from specialist brewing practitioners; all are internationally renowned leaders within their field.

The course consists of taught modules (120 credits), followed by a brewing research project (60 credits) in which you will use skills and knowledge gained during the taught modules to devise and undertake an innovative piece of research. Typically, projects will be conducted in partnership with the brewing industry and provide opportunities for work experience.

Programme duration

MSc programmes last for one year (September to August inclusive) and include a substantial research project.

The Diploma covers the same classes as the MSc and includes a short project but lasts for just 9 months (September to May inclusive). Students admitted to the Diploma programme and who perform well in the taught courses may be invited to transfer to the appropriate MSc programme.

The Postgraduate Diploma/MSc programme is accredited by the Institute of Brewing & Distilling.

The MRes Brewing Science is a research based degree designed for individuals seeking to gain entry into this thriving and progressive sector. This flexible course will help you develop the laboratory skills needed for a career in research and development, particularly within the food and beverage industry.

While covering the scientific principles of brewing, the course allows you to focus on a novel research-based project. Projects are targeted towards subject areas of industrial significance, potentially leading to process improvements and optimisation, as well as helping you develop a detailed knowledge of particular areas of the brewing process.

This MRes course comprises a major brewing research project worth 150-160 credits, 20-30 credits of taught subject modules and up to 20 credits of generic training courses and optional modules.

The structure of the MRes is very flexible, allowing you to fit your research project around taught classes.

As a rough guide, approximately 85% of the course involves laboratory-based research work. The other 15% involves a taught course which is delivered through elearning and intensive week-long residential courses held at the University each semester. These residential courses incorporate lectures, seminars, workshops, laboratory practicals, industrial visits and tutorials. The course can be taken on a full or part-time basis.

Research projects are typically conducted on site within laboratories at the University, although there may be provision to undertake them within laboratories of an industrial partner (if you have secured one).
Taught modules are usually completed within the early part of the course, providing a good knowledge base for the research project.

The overall objective of this master's degree is to train students to become researchers and professionals in the field of fermented beverages, especially wine, sparkling wine and beer. It therefore offers three clear professional specialisations:
-Oenology research: This specialisation train future researchers in the field of oenology and food biotechnology and give students the chance of subsequently studying for a doctoral degree.
-Science and technology of sparkling wines : This specialisation trains future professionals in oenology or viticulture who wish to specialise in the production of sparkling wine, a sector that is widely represented in Catalonia.
-Science and technology of beer: This specialisation trains professionals from different fields (biotechnologists, winemakers, engineers, etc.) in the process of brewing different types of beer on an industrial and artisanal scale.

There is also the option of doing the master without choosing a particularly specialty, a more generic profile. The degree, then, is broad in scope with both research and professional objectives.

Student Profile

This master's degree is designed for graduates of biosciences such as biology, biochemistry, biotechnology, chemistry, oenology, pharmacy, food science and technology, medicine, veterinary medicine, economics, dietetics and nutrition, and holders of any diploma or degree in engineering, who wish to further their knowledge of the production of fermented beverages, in particular sparkling wine and beer, or to do research in oenology and biotechnology. It is desirable for students to have a good knowledge of the main language of instruction (Spanish), and a basic level of English in oral comprehension and writing.

Modern biotechnologies rely on our increasing ability to manipulate organisms at the genetic level and include novel waste treatments and bioremediations, new pharmaceuticals, the exploitation of enzymes in 'green catalysis' and exciting new diagnostic techniques. In the 20th century our lives were transformed by information technology; the 21st century may see an equally great transformation, but this time led by biotechnology.

This Masters degree aims to teach the fundamental molecular bioscience underpinning biotechnology along with examples of its current applications.

Programme summary

During the master Biotechnology you learn more about the practical applications of biotechnology, including age-old techniques such as brewing and fermentation, which are still important today. In recent decades, gene modification has revolutionized the biotechnology industry, spawning countless new products and improving established processes. Modern biotechnology has become an applied area of science with a multidisciplinary approach embracing recombinant DNA technology, cellular biology, microbiology, biochemistry, as well as process design and engineering.

Specialisations

Cellular and Molecular Biotechnology
This specialisation focuses on the practical application of cellular and molecular knowledge with the aim of enhancing or improving production in micro-organisms or cell cultures. Possible majors: molecular biology, biochemistry, microbiology, virology, enzymology and cell biology. The knowledge and skills gained can be applied in food biotechnology, medicine and vaccine development, environmental and bio-based technology.

Process Technology
This specialisation focuses on engineering strategies for developing, enhancing or improving production in fermentation, bioconversion and enzymatic synthesis. Possible majors: bioprocess engineering, food or environmental engineering, applied biotechnology and system and control techniques. The knowledge and skills gained can be applied in food biotechnology, medicine and vaccine development, environmental and bio-based technology.

Marine Biotechnology
This specialisation focuses on the use of newly- discovered organisms from the sea in industrial processes. Applications include production of new medicines, fine chemicals, bio-based products and renewable energy.

Medical Biotechnology
This specialisation focuses on the use of modern biotechnology in the development and production of new vaccines and medicines. Advanced molecular and cellular techniques are used to study diagnostic and production methods for vaccines and medicines. Possible majors: molecular biology, microbiology, virology and cell biology.

Food Biotechnology
This specialisation focuses on the application from biotechnology to food processing. The approach includes microbial and biochemical aspects integrated with process engineering and chemistry. Possible majors: food microbiology, food chemistry and process engineering.

Environmental and Biobased Technology
This specialisation focuses on the design and development of biotechnological processes for solving environmental problems by removing waste products or by producing renewable energy. Possible majors: environmental technology, bioprocess engineering, microbiology and biobased chemical technology.

Your future career

Graduates in biotechnology have excellent career prospects. More than 60 percent begin their careers in research and development. Many of these Master graduates go on to earn their PhD degrees and often achieve management positions within a few years. Approximately 30 percent of our graduates start working for biotechnology companies immediately. Relatively few begin their careers outside the private sector or in a field not directly related to biotechnology. In the Netherlands, some graduates work for multinational companies such as Merck Schering Plough, DSM, Heineken, Unilever and Shell, while others find positions at smaller companies and various universities or research centres such as NKI and TNO.

Alumnus Sina Salim.
In America and Brazil, production of maize and sugar cane for bio ethanol takes up enormous swathes of arable land that could otherwise be used for food production. This leads to the well-known food versus fuel dilemma. An alternative method for producing biodiesel is the use of algae. Currently, too much energy is consumed during the growth and harvesting of algae, but huge efforts are being made to reduce these energy requirements. Sina Salim is trying to develop a cheap and energy efficient harvesting method to ultimately produce biodiesel from algae, a competitor of fossil fuel. Now he is operational scientist at Bioprocess Pilot Facility B.V.

You’ll develop an in-depth knowledge of medical and molecular genetics, and receive clinical genetics training to prepare you for a research project in a modern research facility. You’ll have the chance to collaborate with top genetics research laboratories and clinical partners.

This MSc was developed in partnership with the Sheffield Diagnostic Genetics Service (NHS), which is a world-renowned clinical genetics facility. This relationship is unique to this course and gives you the opportunity to be taught by the Director of the Sheffield Diagnostic Genetics Service, Sheffield Children’s Hospital NHS Foundation Trust,
